Today I knew just what I was in the mood for—egg salad with potato chips. One of my fave ways to eat the combo is actually to scoop up the egg salad with the chips, but since I also want to eat a somewhat nutritious lunch I made a sandwich instead. Here’s how to assemble it: Toast two pieces of bread. Top one piece with a sliced hard-boiled egg and thinly sliced cucumber. Salt and pepper it up. Spread the other piece of toast with a layer of mayo and a layer of mustard. Top with chips then sandwich the two halves. Having the layer of mustard next to the layer of chips is key as the two are a match made in heaven. And just like that the crushed chips left in the bag have found their place in the world and you have lunch.
